In my local, you come to hotel, ask for a room, you got it. If you don’t, find another hotel (usually nearby). Same with restaurant. Do you have a seat ? Yes, get in, no, eat somewhere else. No reason for making reservation.

Good luck finding a restaurant for valentines day without a reservation if you want a fancy one
