What’s for dinner tonight?

    Big ass tub of roast veggie meal prep.

    It’s cooked in ~40 minute intervals. 180c Fan forced oven.

    1. Carrots, sweet potato w/oil and a very light sprinkle of caster sugar (for caramelizing)
    2. Potato, garlic, onions. w/oil, dried onion and salt.
    3. Cauliflower, Broccolini, Zucchini w/the excess oil/juice from my last roast prep.
    4. Nothing added except another 40 minutes of cooking.

    I’m finding the longer I’m roasting veggies the better they get.

        For dinner I give it a bowl full a 25m prep-roast then swirl with spicy peanut sauce. I feel like I’m being a glutton for vegetables. First time I made it I at it for lunch and dinner three days in a row.

      Roasting is the best for veggies for sure, and it brings out the sugars!

      Try a little curry on the cauliflower, and maybe some onions with the carrots/potatoes.

    The big trouble I have when housesitting at my parents is that I tend to want to go through my list of things I enjoy from places around town and none of them are healthy. I should just space them out and it wouldn’t be so bad. All I can think about is getting my favourite spaghetti pizza but I had a sausage roll and 2 cinnamon donuts (another fave) for lunch. I would have 100% gotten special delicious chicken but that restaurant closed down a while ago and I am still mourning the loss of special delicious chicken. Nowhere else I’ve ever been to does it like they did or anywhere close to it.

    The other issue is that my parents gutted the place when they took off in the caravan so there is literally no food here. I’ll go to the supermarket tomorrow.

    For now I dunno… maybe I’ll just drink water and be sad

      Melton Pho! Best banh mis, Beef pho or stir fries. Trust me. It does not disappoint.

      They’re heavy on the veg and light on the meat but still very good.

        Been at least 6 years since I’ve had a Bahn Mi (along with phò) and thats something i miss, there is very little in the way of south eastern cuisine here…mostly sushi and its eithe inedible or priced up there with gold.

    I don’t know yet. It’s GYO so I’m thinking cuppa noodles or toast and sardines or Vegemite or Marmite or peanut butter or all of the above.
